Malanga Montaditos
Ingredients
Slice Malanga with mandolin |
1 lb. boiled Yam in squares |
½ Avocado cut in cubes |
½ minced Red Onion |
Chopped parsley |
2 sliced Garlic Cloves |
¼ cup of Olive Oil |
Juice from one Lime |
1 tbsp. Vinegar |
1 tbsp. Ginger Zest |
Procedure
Fry the Malaga until toasted. In a deep container, add the rest of the ingredients. Marinate and adjust flavor to taste. Mix well and let rest for a few minutes. Serve on top of the crunchy malanga like “tapas or montaditos”
